Default Tire advice - Sizes / Offsets with my setup. Going from 19 to 18, square or not?

So I seem to have maxed out the performance on my street tires, I'm looking for something with more sidewall and a lot more grip.

Currently, I am running the following

245/35/19 Front on 19x8
275/30/19 Rear on 19x9.5

With spacers

19x8 = 47mm (plus spacer - 18) = 29mm
19x9.5 = 27mm + (plus spacer - 10) = 17mm

My rears are rubbing pretty good, but only when hard turning. I haven't set the camber for the front/rear yet, but the fronts are fine. The rear definitely needs some negative camber and I also need to roll my fenders in the rear.

I am looking to go with OEM 18's

I want to do 18x9 all around as a square setup, only reason is because I have a set of R6's I can snag which are 255/35/18 all around. I need at least an 8.5" wheel for the tire, hence why I am looking for a pair of stock rears for the front.

With that being said, I will be transitioning from

19x8 (29mm w/spacer) - 245/35/19 - Summer Street (Hankook Evo12)
19x9.5 (17mm w/spacer) - 275/30/19 - Summer Street (Hankook Evo12)]

TO

18x9 (26mm, no spacer)- 255/35/19 - Hoosier R6 (all around)
18x9 (16mm w/spacer, 26mm without)

Some of questions:

-Does anyone have a square setup for the M3?
--What are the advantages/disadvantages of a square setup for DE?

-How does the smaller tread width equate? It's a totally different tire, but I feel the Hoosier is going to make more contact with the asphalt than the Hankook.

-Should I be using wheel spacers at all? I am not really concerned with the "flush look" for the track, so if it's beneficial to remove them and not have to readjust the suspension, I would to fine with doing it.

I am open to any advice that people are willing to provide.

I've run squares with 245/40/17's both stock and with hoosier track tires and love it. With stock I did not have to use spacers but the hoosiers are rubbing slightly during DE's so I'll be going with 5mm spacers. I've also rolled my fenders for what that's worth. GL!
